Healthy Recipe: Homemade Fruit Roll Up

Strawberry Fruit Leather

 

Ingredients

3 cups strawberries
1 tablespoon honey

 

Preparation

1. Preheat oven to 250 degrees.

2. Remove the stems from the strawberries and rinse.

3. Place the strawberries and honey in a blender and puree until smooth.

4. Pour the mixture on to a parchment paper lined baking sheet and spread with the back of a spoon or spatula in a large rectangle (my rectangle was 11 x 15 inches) making sure that the mixture is completely even.

5. Bake for 2-3 hours (or until it’s dry and not sticky to the touch).

*Remember, cooking times will vary depending on how thick you spread your mixture and how much water (juice) is naturally in the fruit.*

**Every oven is different, so the cooking time maybe less then 2 hours if your oven tends to be hot.**

6. Allow to sit and cool at room temperature. It takes several hours for the fruit to soften up (when you first take the leather out of the oven the edges will be a bit dry and crispy, but if you allow it to sit overnight it softens up nicely).

7. Cut with a knife or pizza cutter into strips or use scissors, keeping the paper on, and then roll the leather into “roll ups”.

8. Serve.

Good Eatin’: 8 Ways to Get Baby Used to Healthy Foods

It’s no secret that food can be one of the most problematic areas that parents face. Picky eaters and defiant toddlers can sometimes make it hard on moms and dads, especially when parents are trying their best to feed their children a nutritious diet. As a mom, I have certainly had my fair share of struggles with feeding my daughters, but after a couple of years I finally feel like I have a few good tricks up my sleeve. My kids eat a variety of foods – things that can certainly benefit their health, and things that I didn’t even try until I was in my twenties. 🙂

 

1) Sneak in Veggies
– Be a sneaky chef!Some babes despise veggies. As a parent, do your best to sneak them in when you can. Shred an entire zucchini into your spaghetti sauce, add some peas to the mac & cheese, throw in a handful of spinach when you’re making their favorite smoothie!

 

2) Sneak in Flax Seed
– Sneak in the grains! You can be sneaky with grains, too! Throw in some oats and flax seed when you’re making pancakes, add some quinoa to your taco meat, put some rice into those meatballs…

 

3) Beans, Beans! The Magical Fruit!
– Babies LOVE beans! Even if it grosses you out, babies love beans. Both of my girls like to eat them plain for a snack. Beans are FULL of protein and can be a great way for your picky eater to enjoy a meal…

 

4) Look out for Corn Syrup
– Corn Syrup is in EVERYTHING. Read your labels carefully! Things like pasta sauce, peanut butter, and applesauce can sometimes be loaded with unnecessary corn syrup. Take an extra second at the grocery store and find the brand that makes it without.

 

5) Offer Dried Fruits
– Fruit Snacks? Babies and kiddos love fruit snacks. Usually these things are made with lots of sugar, fruit juice, and sometimes corn syrup. Instead, offer your little one dried fruits instead. They’ll hardly notice the difference!

 

6) Honey after 1 Year
– Skip the Syrup. After your baby’s first birthday, use honey instead of jelly or syrup! My girls love honey on toast, pancakes, and more.

 

7) Read the Ingredients
– Never heard of it? Not necessary! Try to limit the amount of processed foods your little one consumes. When you read the ingredients, look for things you’ve heard of. If you don’t recognize it, chances are the food is full of unnecessary chemicals and fillers.

 

8) Keep it Fresh
– Fresh is Best. When you can, offer your baby fresh foods. Fresh foods are always better and they look more appealing, too!

Recipe: Pineapple Chicken Soup with Lemon Verbena

Hello, Friends ! 🙂

Today, I wanna share with you a simple recipe that can make you DROOLING non-stop. HEHEHE

Sweet, tangy, and a little bit spicy, pineapple soup is a traditional meal in Southeast Asia. 😎

 

Ingredients

3 cups cubed ripe pineapple, divided
1 can (14.5 oz.) reduced-sodium chicken broth
2 quarter-size slices fresh ginger
1 large garlic clove, smashed
1 1/2 cups lemon verbena leaves
1 tablespoon fish sauce
8 ounces boned, skinned chicken thighs, cubed
1 cup trimmed clamshell mushrooms
1 tomato, halved and seeded, then cubed
1 green onion, sliced diagonally
1/2 serrano chile, sliced

 

Preparation

1. Whirl 1 cup pineapple with 3 cups of water until smooth, about 1 minute. Strain liquid into a 4 qt. pot.

2. Add broth, ginger, garlic, and verbena leaves. Simmer over medium heat, covered, until flavors have melded, 10 to 15 minutes.

3. Strain mixture again, discard solids, and return to pot. Add remaining 2 cups pineapple along with the remaining ingredients and cook over medium heat until chicken is firm, about 10 minutes.

4. Now, you ready to EAT !! 😀 You can also serve with hot rice. Nyumm~~ Nyumm~~

 

P/S: If you don’t have lemon verbena growing in your garden, you could substitute other aromatic Asian herbs such as Thai basil or fresh cilantro.. GOOD LUCK !
